Yes, we do use the Bible and yes, we are Christians, hence the name "Church of Jesus Christ of Latter-day Saints". I'm not quite sure why some people think that we aren't.
Regarding the abstinence of coffee, tea, and similar substances that we feel are harmful things to the body, I'll refer to a scripture that states, "Know ye not that ye are the temple of God, and that the Spirit of God dwelleth in you? If any man defile the temple of God, him shall God destroy; for the temple of God is holy, which temple ye are." (New Testament 1 Corinthians 3:16 - 17)
The Biblical 'new wine', was to my understanding, grape juice, that with age could become alcoholic, but the water turned to wine was likely fresh and not an alcoholic drink.
